International Cheese Awards Press Release March 2018: we chat to chef Will Holland about judging at ICA2018

It sounds like a dream job, helping to judge the entries at the biggest and best cheese show in the world, whittling thousands of outstanding dairy products down to the coveted title of ICA Supreme Champion Cheese. That’s the task awaiting over 250 food and dairy experts in Nantwich on Tuesday 24th July, and we’re delighted to say that award-winning chef Will Holland will be returning to the Cheese Marquee this summer to lend a hand. We’re aiming to top last year’s record-breaking total of 5685 entries – is Will looking forward to rolling his sleeves up and getting stuck in?

“I’m proud to have been associated with the International Cheese Awards for many years and I’m very much looking forward to returning to the 2018 show. If the previous years are anything to go by the show this year will be even bigger, even better and even cheesier if that’s possible!

It’s an honour to have been asked to be one of the cheese judges again. It’s a fantastic opportunity to try some of the best cheeses available in the world, as well as lend my opinion in the fiercely fought categories. It’s always a pleasure to attend the show, cook on the demonstration stage with James Martin, judge various cheese categories and of course taste hundreds of different cheeses.”

Will Holland is currently Executive Chef at The Atlantic Hotel, Jersey, where he has been at the helm since October 2017. Previously Will was head chef at Coast in Pembrokeshire, named the best restaurant in Wales at the AA Hospitality Awards, and before that was head chef at La Becasse in Ludlow, where he was awarded a Michelin star in 2009 at the age of just 29. He’s a regular on our TV screens and has made a number of television appearances, including Saturday Kitchen and The Great British Menu. He was named 'UK Restaurant Chef of the Year 2016' by The Craft Guild of Chefs, and last year reached the grand final of the National Chef of the Year competition – it’s no wonder he’s been tipped to be one of the most influential chefs of the next decade by The Good Food Guide. We’re honoured he’s making a return to the International Cheese Awards, where he’ll be appearing in our demo kitchen as well as helping with the judging.
